Named after the dodgy English convict who set up a distilling empire, the bare brick work, sit up bar, warm service and colourful blue chairs give a hint of boldness to come.

Take a bow chef John Rankin (ex Quay, Astral & Owl House). This food has such wit and personality; you might just dump your date and begin a relationship with it. Truffle Popcorn will wish you brought gaffer tape to strap the entire bowl to your mouth. Smokey Haddock Croquettes, Chinese Pork Buns and Chicken n’ Snail pie give taste buds a whackin good pash! Squid ink-o-phobes will be converted with crispy mullaway, whilst the duck cooked 3 ways will have you wishing it wasn’t a dish to share.

Playing with your food has never been more fun with a deconstructed nacho fondue. With a savvy cocktail and wine list to boot, this place is so good it’s criminal.

Karen’s corporate job back in the UK had included entertaining clients in some of the best restaurants. This ultimately sparked a curiosity 'Just how do they do that?' (she confesses she was brought up on meat and vegetables, so this was all very exciting). Currently a Mr & Mrs Smith 'Tastemaker', she’s flashpacked around the world, learning about wine, experiencing different cultures and cuisines and had a two- year love affair with it all.
