Pumphouse Sydney in the heart of Darling Square, the perfect winter venue.

Newly renovated with intimate spaces

Experience a menu filled with a delightful array of options that cater to various dietary preferences. At The Pumphouse, they understand the importance of accommodating gluten-free, dairy-free, and vegan diets, ensuring that everyone can enjoy a satisfying meal. One standout dish that showcases their commitment to diversity is the wood-fired eggplant with ancient grains. Its hearty, creamy goodness will exceed your expectations and leave you craving more.

Reflecting on my visit here nine years ago, when the only option was a burger, it’s truly remarkable to witness the transformation this place has undergone. While the burgers remain epic and undeniably some of the finest in town, they’ve expanded their offerings to include high-quality steak, poke bowls, and the delectable eggplant dishes. You no longer have to compromise your dietary requirements to indulge in the Pumphouse experience.

If you’re seeking an unparalleled drinking experience, the Barrel Aged Cocktails are an absolute must-try. Crafted by the talented team with meticulous care and boundless creativity, these drinks are true masterpieces.

The menu features three, must-try options:

  1. BOULEVARDIER: A tantalizing blend of Bulleit Rye Frontier Whiskey, Antica Formula, and Campari.
  2. VIEUX CARRE: Immerse yourself in the rich flavors of Bulleit Rye Frontier Whiskey, Antica Formula, Dom Bénédictine, Hennessy Cognac, Peychaud’s Bitters, and Barrel-Aged Bitters.
  3. SAZERAC: Indulge in the perfect harmony of Bulleit Rye Frontier Whiskey, Hennessy VS Cognac, and an Absinthe Rinse.

To further enhance your drinking experience, the Pumphouse team offer the option to smoke your cocktail with a choice of wood chips at no additional cost. Elevate your senses by selecting from a range of wood chip options, including apple wood, cherry wood, American oak, pecan wood, pear wood, or beech wood. We wholeheartedly recommend this to elevate both your drink and overall experience—a truly special touch. In fact, we recently tried a Vieux Carre at another venue, but it paled in comparison to the incredible concoction from The Pumphouse.

Don’t dismiss what was old – because it can create something new and wonderful. Add the Pumphouse to your next night out (plus a perfect venue pre and post show).
