The Joost Bakker Greenhouse


Do no harm.  That’s what ‘horti-culture’ artist Joost Bakker was thinking when he envisioned the Greenhouse, a waste free restaurant now enjoying top waterfront views.

He’s been able to bring to our harbour his temporary version of Greenhouse Perth, with a new pop-up cafe designed in reverse (built to create no waste).

Here’s where you can enjoy a back to basics seasonal café menu constructed by new Australian talent Matt Stone. Each morning his team starts the day milling grain into flour for their wood fired bread, pasta, pizza and pastries, freshly squeezing juices, making yoghurt and butter from scratch.

Expect to use plantation timber cutlery and sit on chairs made from leather off-cuts and old aluminum irrigation pipes. If you need to use the amenities be satisfied that your flush comes courtesy of the previous user’s recycled sink hand wash water.

Not only is the eco-friendly café built using recycled materials, Greenhouse waste is recycled and the herbs and vegetables from the menu are grown on the roof.

Designers, engineers, builders, scientists, farmers, chefs and others are among those whose knowledge and advice have gone into every aspect of creating the Greenhouse, from the lighting, to the menu, to the fresh baked bread and the worm farm.

It’s all in the effort to encouraged awareness of the impact of food choices on the environment. And goes to show; your daily choices of materials, ingredients, and practices can be all bark, no bite.
