Meet Your New Vietnamese Uncle

Uncle interiorWhether it’s virtue or sin you are looking for Uncle in St Kilda can offer both. Split over two levels, this newcomer to Carlisle Street is serving up Vietnamese food in a space that puts Victoria Street to shame.

As you walk in you’ll be met with a dark, neon filled cocktail bar. Take the stairs to the next level and you’ll find a light filled restaurant with wooden design, yellow details and stunning handmade crockery from Fork Ceramics. Downstairs is for the sinners, upstairs for the saints. The designers from Foolscap Studio have done well on this one.

Chef Dai Duong and front of house gun Rene Spence felt St Kilda needed some new Vietnamese nosh, and they felt it needed to be authentic. Betel leaves of lime cured hapuka, coconut, pomegranate and chilli are light and refreshing while the Pho Bo – traditional Vietnamese beef noodle soup – is warming and packs a flavour punch.

Victorian beers like the Uncle’s Brew by Cavalier Brewing sit next to the Vietnamese Bia Ha Noi while the wine list is predominately Australian, offering the 2012 Bianco by DOC, Grigio blend that is being busted out on tap.  

After being open a week, they’re finding themselves running out of food at the end of each night, so come early. Looks like St Kilda was waiting for Uncle to arrive.
