Pork Star at Wilbur’s

There’s certain irony eating pork in a restaurant affectionately named Wilbur’s (after the pig saved from the slaughter house in Charlotte’s Web). However one bite of the Porchetta Roll at Wilbur’s Place and your conscience goes out the Potts Point virtual window.

This luscious combo of pork marinated overnight in fennel, rosemary, thyme and confit garlic then slow roasted, and enveloped in a soft bun with house mayo and crackling – all for $7! – is an absolute knock-out.

Wilbur’s is the newest venture by the Bourke Street Bakery rat pack – and boy do they know how to cook beyond the bun with a line up of cracker dishes, all under $20. Fancy a refreshing salad of fennel, cucumber and gravlax, or slow cooked brisket with crunchy green beans in a flavoursome jus. Surprises continue with a gougère; a Yorkshire pud lookalike with a cheesy open pull-a-part structure.

And for those with a sweet tooth, the fun doesn’t stop with an irreverent wonton style apple pie served hot with house made vanilla ice-cream.

With a magic combo of Allpress coffee, a feel good factory style fit-out with wrap around benches, prime people watching spots and friendly staff; locals are going to love it. The rest of us will travel to it.
