The Sensory Lab

If you consider yourself a true coffee connoisseur then you’d be familiar with the Third wave of coffee movement. It’s all about flavour, educating coffee lovers through defining taste profiles and offering a truly bespoke coffee experience.

As one of the coffee capitals of the world, Melbourne is home to the creative St Ali team who collaborate on some interesting retail relationships. First with David Jones on Little Collins St in the city replacing the old luggage department and most recently with Grace Boutique in Toorak.

The David Jones location is perfect for swinging by on your bike for a true coffee window, hole in the wall coffee on the run or (and we recommend this) sit inside for the full Sensory lab experience incorporating seating groups for one or many complete with a mirror, hook, lamp and bench for you to hang your brolly and parcels.

You’ll be guided through a sensory journey to discover your ideal choice, brewing method, aroma tests and some tips on how to truly savour the experience.

At Grace, you can combine shopping the latest collections carefully edited by owners Ilana Moses and Georgia Danos with a coffee made from barista Oscar Crosara in the mini Sensory Lab experience located at the back of the store.

Whatever your brewing preferences, there are hours of pleasure, to taste, smell and enjoy your caffeine hit.
