Welcome to the Hendrick’s Assistance Dispensary for Advantageous Cocktail Mixing Bar. Sorry, say again? Yes, it is a long name, but it’s the details of the limited-edition cocktail list you need to know.
Hendricks has popped up at crowd favourite, The Tilbury, taking over the upstairs deck of the bar until November 19. Get in quick, so you don’t miss out on the celebration of all things gin, plus, a tasting of the company’s latest innovation, Hendricks Orbium.
While the Hendrick’s Orbium and soda is a must-try for aficionados, it’s the cocktails served from a stunning Victorian bathtub that get the taste buds excited. A personal favourite and, an ode to its venue, The Thrilbury ($18), is sweet, light and oh so wonderful. Every sip tastes of summer.
The bar’s other unique creations include:
- Baz Lime-On ($18): Hendrick’s Gin, lime juice, sugar syrup, cucumber, basil leaves
- The Lesley Gracie ($16): Hendrick’s Gin, elderflower, soda water, cucumber
Who is Lesley Gracie you may be thinking? Lesley is the alchemist who created Hendricks – someone we all should raise a glass to for creating the wonder that is Hendricks Gin.
If you’re more of a classic person, don’t worry, they are also on the menu:
- Hendrick’s Gin & Tonic ($14)
- Hendrick’s Orbium & soda ($16)
Hendrick’s Assistance Dispensary for Advantageous Cocktail Mixing Bar is located at The Tilbury Deck, which is found upstairs at The Tilbury Hotel. The bespoke cocktail list and Hendrick’s Orbium will only be available for the pop-up. Hendrick’s Orbium is an on-premise release only and will be available in limited edited nationally from October.

Killer cocktails, Insta-perfect rooftop pool, impeccable design, a guest list rumoured to have featured both millionaires and royalty. Race course. We bet you weren’t expecting that one.
Forget waking up to chirping birdies or the sea breeze. At The William Inglis, you wake up, pull back the drapes and watch the early morning warmups out on the race track. The mist is still burning off when jockeys take their horses out onto the track. It’s a sight to behold, and a lucky few get to see it without having to wake up at the crack of dawn. Ask for a room looking out over the racetrack – if you’re splurging, the corner Executive King Suites have the best views of the track. If you’re more motivated by nostalgia, or in need of a little bit of luck for the day, each of the 144 rooms and suites is named after different champion race horses that have been sold by the Inglis family so you can request the one that has extra special meaning for you.
When did your last cocktail come served in a hip flask? The novelty factor is off the charts when it comes to the Old Fashioned at Wild Sage. The bar tenders have had a fair bit of fun with this classic drink, putting it very much back in fashion. Your hip flask arrives in its own wooden box, alongside a very well dressed glass, garnished with caramelised orange slices and cut ice. The idea is you poor the drink out into the glass at your leisure, but hey if you want to give the hip flask a go, no one will stop you. Now, sometimes a novelty cocktail can be a flash in the pan, but this baby hits the spot.
