Duke Has a New Duke

All hail Duke of Darlinghurst Chef Nicholas Hill. Descending from one of only five two-Michelin star rated restaurants in London (The Ledbury), Duke Hill – considered royalty in the British culinary monarchy – has fled the motherland returning home to Sydney town. So, where can we find his Lordship? The kitchen at Duke Bistro, of course. 

Hill has partnered with Ex-Ledbury nobleman Billy Hannigan to deliver a new concept at Duke – think Brit inspired ‘bistronomy’ style food where crowd favourites are transformed to spectacular dishes fit for a King.

Say hiya to jolly good dishes like soft poached hens egg wrapped in threads of kataifi pastry with sweet artichoke puree, and radish in dashi butter. It’d be terribly rude to pass on larger dishes including pork neck with sherry and slow cooked lamb shoulder with goat’s milk and dried olive. For a spot of dessert, grace your lips with a few bite size fluffy sugar-dusted doughnuts with lemon curd and cream.  Awfully pleasant, indeed.

Everything else is as you remember it – climb the stairs next to The Flinders Hotel, enter the quaint dimly lit space, enjoy a tipple and settle in for a truly memorable meal.
