Steer Dining Room: Best Steak Restaurant in Melbourne. Every Cut Tells a Story

A simple glance at The Steer Dining Room Instagram page, I started with a quick peek at a reel about steak, somehow took me from an early 9pm bedtime to nearly midnight. I simply could not stop watching the passionate Harold, restaurant manager of Steer, talk through each cut of Wagyu. The marbling, the ageing process, the feeding of the cattle. 

Before long, I had my partner’s attention. Forget a Netflix binge, this was impossible to switch off . We found ourselves snuggled up well into the night, watching every snippet, until we’d seen it all. 

The Arrival – A Hidden Entrance with a Clear Intention

My Uber dropped me slightly perplexed, as I searched for a discreet, almost hidden door tucked into a quiet nook. The moment I stepped inside, it all made perfect sense. A magical space, both austere and uplifting, with a quietly humble greeting. I’m seated at my table, already feeling a wave of calm. 

Everything here is intentional. The dark interior. Immaculate, luxurious, couch-like chairs. Tablecloths so pristinely ironed they feel untouched.  

An opulently grand chandelier hangs above, with mesmerising textures that I could happily sit and stare at for hours. I’m later told that the intricate patterns are designed to reflect the unique marbling of these beautiful beasts. 

The Man Behind the Experience 

Then, the wonderful Harold appears. Pristinely dressed in his gorgeous glasses and polished suit, and most shining his beautiful soul. Turns out the passion, exuberance and wisdom that we watched in the videos, were indeed more delightful in person.  

He takes us on a journey, explaining how these magnificent animals have made their way here. Each cut is intentionally sourced from specific farmers and producers, some local, and others international. He details the distinct characteristics of each, the flavor profiles shaped by diet, treatment and breeding. His delivery with care has the perfect balance of both precise and intimately personal.  

The Moo Cow Moootel 

Let’s be honest, all meat that ends on our plate, be it a dirty sausage, a greasy burger, or just a regular steak has gone to cow heaven at some stage.  

At Steer however, prior to this, these animals had the honor of a stay a glamorous hotel. Harold explains that prior to their slaughter, these beautiful cattle are treated to the Moo Cow Moootel. There, they run wild and free, are given chocolate and candy to much on, and quite literally butter up before being buttered up.  

The Experience Unfolds 

There are many takes on beef tartare across Melbourne and beyond. But this one is next level. Prepared fresh at the table, it becomes a performance. Roasted fermented black garlic, rich without yet not overpowering, is folded into finely cut, beautifully tender meat, creating a silky emulsion lifted by a delicate aioli. Then, with surgical like precision, Harold places a crisp saltbush leaf on top for some deep earthiness.  

Wine Moment 

When I see the Châteauneuf-du-Pape pop out, I can’t help but feel my eyes pop out with delight and are shinier than the glowing chandelier. This is not a mainstream wine, and much like the cows in their hotel, in each sip I’m in hedonistic heaven.  

Chocolate Brisket and Wagyu Continue 

Four perfect squares arrive, decorated with delicate flowers and a playful rainbow garnish. I assumed this is dessert. And I’m utterly mistaken. These are decadent pieces of slow cooked brisket. While there is a steak knife next to me, the buttery meltingly moist texture, means the knife leaves the table untouched.  

In case our arteries hadn’t already taken a full battering, which I bank as tomorrow’s problem, we’re presented with the most esteemed cuts of meat I’ve ever encountered. Sher Full Blood Wagyu and Kumamoto. Each bite is rich, silky and deeply layered. The kind of intensity that lingers, coating the palate without overwhelming it. 

I find myself pausing. Not just to take it in, but to appreciate the journey that brought it here. 

Steer Dining Room is a new level of dining. A truly immersive experience that begins well before you enter and lingers long after the final bite, the memory glistening well beyond the meal itself.  

Voted internationally as one of the World’s best Steak houses, it’s no wonder this restaurant has earned such acclaim, and Melbourne is fortunate to call it its own.

What We Need to be More Addicted: The post-meal belly bulge. While this is an experience worth indulging in, it may not be one you’d tackle every day
