Mon Cheri, Guillaume is Back

Guillaume BrahimiAh Guillaume Brahimi. We would go to your restaurant just to hear your accent. The fabulous French food is a bonus.

Good news for food fiends and fanatics. Guillaume is back in Sydney, taking over the history Darcy’s Restaurant in Paddington and bringing Guillaume to Sydney’s fine dining. Giving new life to an Eastern suburbs institution is no easy feat but this team is taking things seriously, with a big renovation and a big commitment to the Brahimi school of thought.

This chef has never been shy about his passion for sharing, learning and perfecting skills in the kitchen. His focus on produce and seasonality that we’ve all come to know and love is still here. Along with a few of the old favourites from Guillaume at Bennelong.

Like all celebrity chefs’ restaurants, you’re not guaranteed a sighting of Brahimi when you dine, but there’s a good chance you’ll see him in these first coming months. Head Chef Kevin Solomon has been in Brahimi’s kitchens for six years and will be at the helm so either way, you’re in capable hands.

We’ve heard prime nights are booking up well into the coming months – good luck getting a table on Saturday night before November.

The restaurant’s private Balcony Room will also be up for grabs, seating 14 in a space that’s got great views out over Paddington. You won’t be disappointed with the rest of the space either – Brahimi and designer Tamsin Johnson have brought out the history of the building but went luxe with French wallpaper, custom made Mud Australia crockery and Murano glass chandeliers dusted off in a market in Paris and brought home to shine.

And yes, there are crisp white linen tablecloths of course.

Guillaume is definitely back.
