Newly opened in the Waterloo precinct, this unique space mixes a head office, warehouse, test kitchen and communal dining space with a casual tapas bar.

Step one foot off Danks Street and you’re welcomed warmly at The Mojo Wine Bar by manager Peter Neild’s polished team. With a New York warehouse inspired feel (think raw finishes, industrial fittings and polished concrete floors), take a seat at the modular bar, or at a table – both enjoy the warmth of the longest indoor heater.

This is where small plates are made to share. Head Chef Wayne Lee deftly prepares the small wonders right before your eyes. You’ll want to start with a plate of freshly shucked oysters before moving onto a perfectly balanced signature dish combining slices of raw Kingfish, a ginger syrup (cured for a month) and topped with dollops of Persian feta.

The pork belly tacos will agree with your tastebuds but don’t expect the sliders to feature meat; at Mojo making tasty appearance is either lobster or prawn.

You get a sense things will keep evolving here in true Mangan-entrepreneurial style. The writing’s on the wall: “We want the customer experience to be the best it can be”.
