You can’t keep a good bun down. Toasted, grass fed, smoked, saucy, juicy – Sydney’s burger scene has come a long way from the humble diner fare. And since it just keeps getting bigger and better, we’ll keep bringing you the latest and greatest in town.

Here’s our burger guide to the new buns in town.

Not since the days when Din Tai Fung first burst onto the scene have we seen such a buzz around the top level of World Square’s eating precinct. Never one to rest on his laurels, last week Neil Perry opened The Burger Project, a fast and affordable burger joint that’s already drawing big lines at lunch hour. Perry’s Rockpool Bar & Grill burger is already on just about every Sydney best burger list but the difference here is the price point. A Classic – grass fed beef, pickles, onion, tomato, lettuce and special sauce – sets you back just $7.90. A vegetarian Magic Mushroom is the most expensive at just $12.50.

Perry’s penchance for Asian flavours shines in the Korean, grass fed beef, kim chi, onion, lettuce and spicy Korean dressing. There’s also crispy hot wings, Spicy Dogs and “Real Shakes”. We’re digging any reality where Valrhona chocolate and dulce de leche milkshakes are on the menu.

Mark Best is bringing the action back to The Four Seasons with his brand new outpost of Melbourne’s successful Pei Modern. Favourites like lamb slow cooked in chamomile and casarecce chicken dumplings have made the jump across the border. Lucky for us, the bar menu has also scored Melbourne’s Saganaki Lamb Burger. The lightly fried Greek cheese oozes in all the right ways – a must try next time you’re in Circular Quay. Since one burger is never enough, you’ll also find a great find at Four Seasons’ other establishment, Grain. Who need double decker burgers when you can have two full sized ones instead.

Newtown’s favourite down-to-earth burger joint is branching out, with a CBD site due to open in just three weeks. The Castlereagh Street site will be all about fast flavours without sacrificing on quality. Take away only, with a range of old favourites and new specials, Mary’s CBD is set to be the lunch hour hotspot very very soon.

Settling into the home of short lived Mexico Food & Liquor, new dive bar/drinking den/diner Brooklyn Social is already carving a new identity as the place for a hearty burger. Try the Meat Packing District wagyu burger, served with American cheddar and Brooklyn Social’s special sauce, or go all out with the gravity defying quarter pounder. Hungry already? Wait until Saturday. Between 1-2pm, you can Flip Your Burger. Buy a drink and if you beat the bartender in a coin flip, your burger is on the house.
