DIY Summer Cocktails

While we’ll never turn a perfect dry martini away, when warm summer nights roll in, switching it up feels kind of essential. We’ve turned to some of our favourite Sydney eateries for the perfect summer cocktails to cool us down when the heat hits.


Summer Spritz @ Bar Machiavelli

50ml Aperol Infused with cardamom
15ml Pomegranate liqueur
Dash of Apple Cider
Bubbles (of your choice)
Fresh orange, lemon and strawberries
garnish– sprig of fresh basil

 one >pour ingredients over ice and top with fresh orange, lemon and strawberries
two >serve in a large bowl-style wine glass
three >garnish with fresh basil and enjoy!


Watermelon Frose @ Café del Mar

5 Cubes seedless Watermelon
120ml Chandon Rose
20ml Sugar Syrup
15ml lemon juice
garnish– watermelon triangle

  one >compile all ingredients into a blender
two >add 1 full scoop of ice
three >blend for 30 seconds until you have a perfect consistency
four >garnish with a watermelon triangle & enjoy!


Belafonte Spritz @ Bistro Moncur Mosman

 30ml Tanqueray Gin
15ml Fresh Lemon
22.5ml Vasse Felix Cane Cut Semillon
Dash of Soda
Prosecco (of your choice)
garnish- Dehydrated grapefruit
Edible flowers
Thyme

one >build all ingredients into glass
two >add ice
three >garnish with dehydrated grapefruit, edible flowers and thyme; enjoy!
