Summer dreaming.

Now that we’ve passed the shortest day of the year, we can safely start dreaming about those long balmy summer days that will arrive shortly- not to mention those oh so delicious cocktails!

Thought we’d share this Cumulus Inc special and our soon to be summer staple.


Watermelon Sorbet and Salad with Vodka
Refreshing, grown-up goodness.

Serves 10
(i)   Watermelon Salad
       55g Caster sugar
       60ml Water
       Small handful of mint leaves, roughly torn

(ii)  Watermelon Sorbet
       About 1.5kg Seedless watermelon
       150g Caster sugar
       70g Glucose powder
       Juice of 1 Lime 

(iii) To serve
       1 bottle of vodka
       10 Lime wedges 

(i) For the watermelon salad, place the sugar and water in a small saucepan and bring to a simmer.
As soon as the sugar has dissolved, remove the syrup from the heat and set aside to cool.
When the syrup is tepid, add the mind and leave to infuse, until the syrup is completely cold.
Put the watermelon in a large bowl and pour over the cooled syrup.
Place in the fridge for a few hours to macerate turning the pieces of watermelon once in a while

(ii) To make the sorbet, puree the watermelon in a blender, then strain through a fine sieve,
you need 1 litre of watermelon juice- feel free to drink any excess.
Pour 200ml of the watermelon juice into a stainless-steel pan and add the sugar and glucose.
Bring to a simmer, then remove from the heat and return to the blender.
With the motor running, slowly add the remaining watermelon juice and the lime juice.
Strain again before churning in an ice-cream machine according to the manufacturer’s instructions.

(iii) To serve, remove the mint from the salad.
Drain any juice from the macerated watermelon and arrange in glasses, then top with a generous
scoop of the sorbet.  Serve with a jug or bottle of vodka on the side for your guests to help themselves-
or, if they can’t be trusted, add 1 tablespoon to each glass before serving.
Serve lime wedges on the side or squeeze a few drops of lime juice into each glass.
