Vacanza fans learn to share

Like an only child having to share their favourite toy, Eastern Suburbs pizza aficionados are chucking tantrums as their favourite local pizza joint Vacanza opens in Surry Hills for the rest of Sydney to enjoy. 

Fiercely protective, you’ll have to wrestle the loyal fan base for a seat in the unpretentious and authentically Italian pizza house, perched on the corner of Bourke and Fitzroy Streets.

Loved for their traditional thin Sicilian base and their less is more toppings philosophy, you know they mean business when the menu states ‘modifications are politely declined unless it’s a matter of life and death’. 

Tuck into bloody brilliant pizzas like ‘Il Capitano’ with San Marzano tomatoes, Italian fior di latte, truffle oil, goats cheese, Swiss mushrooms, and pork and fennel sausage. But do not underestimate the glory of the humble Margherita with a generous layer of red sauce, large blobs of Campania Garofalo buffalo mozzarella and fresh basil.

There’s also a mozzarella bar where you can mix and match Italian cheeses, fresh Campania Garofalo buffalo mozza, prosciutto, salami, white anchovies and olives. Plus solid entrée options including the ubiquitous caprese salad and cheesy arancini.
