Monday Madness, Two for Tuesday — these are the nights that purveyors of slodgy pizza go to sleep with their cash registers fuller than their bellies.

But under the cloak of darkness a slew of guerilla chefs are waging culinary warfare, cooking up a solution to early weekday mornings spent full of residual grease and regret.

They’re calling it Hungry Mondays, and it’s a big batch of slow cooked goodness that simmers in the kitchens of the city’s best restaurants after the Sunday night staffies have been quaffed.

They’ll tell you it started at El Capo, but exactly which kitchen your Mexican pork with guajillo sauce stewed in for 16 hours remains a secret. What you can know is the numbers: 10 to 18 hours on the stoves, 10 days of freshness in the fridge, three minutes in the microwave and only $9 per serve.

Other recent creations include 15 hour lamb with red wine jus and 16 hour Jamaican jerk chicken with coconut rice and peas. Check the website for next week’s offering, pick up your vac-packs from The Hollywood (Surry Hills), Cleveland’s (Redfern) or Knight’s (Ultimo) and go home with good food.

Mondays just got a little more exciting.
