Momofuku Seibo Sydney Opens at The Star Sydney

When a man named on TIME magazine’s ‘100 people who most affect our world’ list speaks, you stand up and listen – well, sit down and eat in this instance.

World Chef heavyweight David Chang has opened his first Momofuku outside of New York, and he’s chosen none other than Sydney’s new ‘Miss Popular’ The Star as its home.

Get through the military-like online reservations system and you’ll find yourself in an intimate 30-something seat restaurant with nothing less than the kinda urban suaveness you’d expect from a seasoned New Yorker.

Pull up a stool around the open kitchen, settle in and let the 15-course tasting menu roll out before your very eyes – literally – the Chef’s cook and plate-up in front of you.

The love-child of a culinary genius, Chang’s food is impossible to ‘label’ – a meeting of Japanese, Korean, American, Australian – switching from chopsticks to cutlery, and back again. And yes, the famous pork bun makes an appearance.

Be dazzled by the impeccable food and theatre of the kitchen. But get in quick to see Chang on the tools – those New Yorkers are possessive types
