Chef Alejandro Saravia – Sydney-based Peruvian Chef in pursuit of sharing his passion for Peruvian food. He’s just launched his new exclusive cooking classes, giving you a rare hands-on experience in the culinary delights of Peruvian cooking.
 
Illapu PERú  (pronounced “ee-ya-pu”) – Chef Saravia’s gastronomy concept translates as ‘Star of Peru’ in Peruvian dialect Quechua.

Criolla y Marinero, or coastal zone is a region known for the famous dish ceviche (pronounced se-vi-che), it also happens to be the national dish of Peru. During a three hour close-up in the kitchen, discover how to cook dishes from the Coast, Andean Sierra, or the Amazon jungle, with native ingredients such as the tubers (the potato), quinoa corn and aji paste (Peruvian chilli paste).

Peruvians have been successful at preserving their culture for thousands of years, but brace for a bigger move towards this type of exotic in Australia. Get familiar with the latest culinary lexicon and your tastebuds will do the rest of the talking.
