High tea by the seaside


There are some things Italians just do better. Well-tailored suits, deliciously dark coffee, creamy carbonara pasta and storybook romance — all are improved in the land of the Bel Paese. And high tea is about to get the same treatment, with Manly Pavilion head chef Justin Barthelmess drawing on Coast of Almafi-esque influences to put a spin on the traditional high tea experience.

You won’t find simple sandwiches or scones with jam on this Italian style menu. Instead, cannoli, sweet pastries and pistachio clusters, frittata goats curd and cavalo nero. Upgrade from the basic high tea and you’ll receive three Italian wine matches to make lingering in the pavilion’s glamorous Mediterranean-inspired surroundings that much more satisfying.

The new concept is a fitting return to Manly Pavilion’s heritage — the building was originally a tearoom in the 1930s, complete with dances, card parties, foam baths and slimming courses for ladies.

You’re all for tradition, just willing to forego the last of these in favour of pudding-like Amedei hot chocolate and crunchy Biscotti di Nona.
