If the words ‘Tablefor20 at Sticky Bar’ trigger an involuntary physiological reaction in you (medically known as ‘the warm and fuzzies’), then stop, and pay attention.

The boys behind the infamous Italian neighbourhood eatery have swung open doors at their new venture in Darlinghurst – Buffalo Dining Club.

An ode to all things cheese, you’ll find what’s possibly the freshest Buffalo mozzarella and burrata in Sydney (flown in three times a week from Italy). Choose one or the other, add two sides from the mouthwatering antipasti list – anchovies, charred brocolini, honey roasted fennel, Portobello mushrooms – and you’ll have yourself a Sicilian party on a plate.

And if formaggio doesn’t float your boat, how about imported Parma and San Daniele proscuitto, mortadella and salami freshly shaved (heavenly thin) served on deli paper?

Order a pasta if you love a good portion of ‘novelty’ – it’s served rustic-style straight from a hollowed-out wheel of pecorino.

Stray from dairy-based goodies to the boutique wine list which includes solid house varietals and some more adventurous drops from Lebanon, Hungary and South Africa.

Make your way to the old Burgerman site on Surrey Street, pull up a stool in the itty-bitty dining room, and eat like the Italians do.
